Grill Once & Eat All Week: Leftover Recipes
Over Leftovers?
The prospect of leftovers doesn't have to leave you cold. In fact, with some strategic shopping and storage and one marathon grilling session over the weekend, these second-day dishes could be the tastiest things you eat all week.
Just start with these central recipes, and enjoy them as is, or use our suggestions and recipes to bring 'em back for an encore. Now get cooking!

Salmon
Fresh salmon steaks are great on the grill, and your leftovers can add an unexpected fresh touch to recipes that call for canned -- just sub in your pre-grilled fish.
Start with Steven Raichlen's Salmon with Mustard Glaze, omitting the glaze for half the salmon portions. The next day, use the leftovers as a healthy addition to crisp salad greens, swapped into your favorite tuna salad recipe or kick up our Cheesy Salmon Pasta using fresh instead of canned.

Steak
The hardest part about this will be not chowing down the second the steak is off the grill. OK, you can, but make sure to refrigerate or freeze a portion for later in the week.
Start with Steven Raichlen's Ginger-Soy London Broil, and be the envy of the office when you tote in Steak Salad-Stuffed Pockets, Steak-&-Boursin-Wrapped Bells or Korean-Style Steak & Lettuce Wraps. Just ignore the cooking instructions and use the stuffing and wrapping technique parts of the recipes.

Chicken
When life hands you grilled chicken (lucky you!), make Grilled Chicken Noodle Soup -- or Grilled Chicken in Pita Pockets, or Grilled Orange Vinaigrette Chicken Salad, or Easy and Fast Cajun Chicken Caesar Salad...you get the idea!
Start with Steven Raichlen's Grilled Chicken Under Bricks, and don't be chicken about experimenting.

Corn
Husk-grilled corn is delicious straight from the grill, but it also adds a sweet, smoky hint to dishes you can serve throughout the week.
Start with Steven Raichlen's Grilled Corn, slice off the kernels and refrigerate or freeze to pop into Cool Fresh Corn Relish, Fried Corn With Bacon, Black Bean and Corn Salad, or Daddy's Fried Corn and Onions. Try tossing it cold into salads and your favorite biscuit recipe for a bright burst of summer color.

Veggies
Fresh veggies are some of the greatest treats of the summer and oh-so-versatile on and off the grill. Fire up a batch of peppers, eggplants, tomatoes, onions, squash, zucchini -- anything that's in season, refrigerate, and slip them into hot or cold pasta, salads, sandwiches, soups, pizza, salsa and snacks all week long.
Sample some of our favorites:
--Grilled Tomatillo Salsa
--Asian-Flavored Vegetables Grilled in Foil Packets
--Grilled Pizza with Pesto, Tomatoes & Feta
--Red Bean Salad with Feta and Peppers

I love to grill, not only meats but also many different veggies and even pineapple! I love to use my leftovers in a garlic butter pasta. You can use grilled chicken with sauteed veggies with the pasta covered with grated cheese and it is delicious. Or I like to use left over grilled steak with grilled peppers over rice.
