Tuna-mac is a great weeknight dinner, but plenty of casseroles -- like shrimp and monkfish jambalaya or pasta, potato and Parmesan cream casserole -- are stellar enough to take to a potluck, serve to company or just please the family on a leisurely Sunday evening.

Turkey and Bean Enchiladas
Tart and tangy tomatillos give this Mexican-inspired casserole an upgrade, along with fresh cilantro, jalapenos and plenty of spices. A relative of tomatoes, tomatillos come in a papery husk and are the base of green salsa. Start the evening with a little chips and fresh guacamole -- and maybe a margarita for the adults -- to put some olé in your Sunday.

Pasta, Potato and Green Bean Bake with Basil Cream and Parmesan
This is a very clever twist on a Northern Italian summer dish made with pasta ribbons called trenette, new potatoes, crisp green beans and plenty of pesto. Instead of boiling the pasta and potatoes together, this dish is made with baked lasagna noodles. It might not be totally authentic, but it's extra delicious thanks to the Parmesan cream, which demands you serve this with plenty of crusty bread.

Once you've mastered this strata -- a savory bread pudding bound with a creamy egg custard -- spring and summer suppers are a breeze. Fee free to substitute in-season vegetables and herbs, like leeks or zucchini, or whatever leftover cheese or meats you may have on hand.

Crustless Crab Quiche
This very creamy crustless crab quiche -- which can be made elegant if baked in a beautiful dish -- is a perfect spring and summer Sunday supper. Add a sprinkle or two of fresh, in-season herbs like chives, parsley or chervil. Toss in a tomato and cucumber salad and some buttered rolls and dinner is ready.

Jollof Chicken and Rice
Eaten all over West Africa, Jollof rice is a one-pot, catch-all dish that usually starts with a base of tomatoes, onions and spices. This recipe calls for saffron or ground turmeric, but you can experiment with nutmeg, ginger, chiles or cumin, too, along with any number of meats or vegetables. For a traditional touch, serve it with fried plantains and a salad.

Oven Braised Lamb Shanks with White Beans
An easier take on the classic southern French dish called cassoulet – the original usually includes pork sausages and goose or duck in addition to lamb -- this white bean casserole is just the thing to make on a rainy Sunday. Serve it with a green salad simply dressed with oil and vinegar.

Lamb and Parsley Shepherd's Pie
Piled with pillows of creamy whipped potatoes, shepherd's pie is one of those dishes that screams Sunday supper. The simplicity of this recipe -- just potatoes, lots of fresh herbs and lamb -- is what will make the dish shine. In the summer, sliced tomatoes and corn on the cob would be perfect accompaniments.

A mix of creamy mushrooms, sagey pork sausage and wild rice make for a savory, earthy dish that will star at a Sunday supper. Try substituting portobellos, cremini or even wild mushrooms for white buttons and Gruyere cheese for the cheddar to add even more flavor.

An adaptation of Spanish paella brought to Louisiana by early colonists, jambalaya is now solidly a Cajun and Creole classic. No two families make theirs the same way and you can easily substitute any combination of shrimp, oysters, crab, sausage, fish, chicken or ham. Serve it with a soft loaf of garlic bread and a simple green salad.

Shrimp Chili Cornbread Casserole
Spiced with chili, cumin and cinnamon, studded with squash and topped with cornbread, this tomato and shrimp casserole gives a nod to Creole cooking -- and those who like more spice shouldn't be afraid to add either dried chilies or hot sauce to add some heat to the mix. Round out the meal with a green salad, minty iced tea and a dessert of fresh fruit cobbler and ice cream.
